Now a little bit about this bowl...

When I am busy during the day sometimes the last thing I want to do is make dinner. I’ve been buying some frozen bowls, then I add more veggies to give the dish a little boost.

One of my biggest pet peeves with frozen meals is that many of them are low in calories and crabs, which leaves me unsatisfied and hungry. So, what do I do?

Aim for ones that have minimal ingredients (or at least ones you can pronounce), are lower in sodium (target <25%DV) and have a balance of lean protein, carbohydrates, and fiber. It’s always easy to add in some healthy fats like olive oil, nuts or seeds if need be!

A healthy dinner doesn’t always have to be fancy! This one was a Mediterranean quinoa and chicken bowl, with red bell peppers and spinach, and I added in some fresh spinach, mushrooms, olive oil, balsamic vinegar, and crushed black pepper.

Cacao nibs always give the best added crunch. Two of my other favorites are a low-sugar cereal like Cheerios, or buckwheat groats. They add some whole grains, fiber, and extra plant-based protein.

• Cook brown rice according to package.
• Sauté sliced zucchini and carrots in a happy amount of olive oil and a dash of sesame oil until they soften and start to caramelize, making sure to stir frequently.
• Cut up chicken (or other protein) into cubes and cook until internal temperature reaches 165 degrees.
• Add rice, veggies, and chicken to a bowl, and top with sesame seeds, soy sauce and ponzu sauce (trust me on this - the best added flavor!)

#grainbowls are awesome because you can always switch up your veggies, or use a different type of grain. I also love forbidden rice, wild rice, and quinoa!
